From Eggplant Parmigiana, to Sorrento

Fall is just around the corner and summer feels like a distant memory, but I have a simple antidote for a cold, gloomy day: I start with some good music (usually a mix of jazz, classical and 80s rock) then I head to the kitchen to prepare one of my favorite Italian comfort food dishes: Parmigiana di Melanzane (Eggplant Parmigiana): yummy layers of lightly fried eggplant, covered with a fresh tomato sauce, mozzarella slices, basil, and grated Parmigiano Reggiano cheese – all baked to perfection. Ahh, feeling better already.

Some say that this simple yet delightful dish originated in the region of Emilia Romagna and the name Parmigiana, from the city of Parma. Others believe that it was first prepared in Sicily, where the word ‘parmiciana’ is used to describe wooden shutters with layered planks, like the eggplant slices in the recipe. But the version we are most familiar with today, has been known to be a specialty ofNaples and the region of Campania, for over 200 years.

Regardless of its origins, eggplant parmigiana is yet another proof that some of the most amazing dishes, can be prepared with simple, easily available ingredients.When I think of Eggplant Parmigiana, I am reminded of a lovely Michelin star restaurant in Sorrento: Terrazza Bosquet.
